This is white chocolate as it should be, totally pure and sublimely creamy. It comes down to beautiful ingredients and perfect balance. Natural cocoa butter, raw cane sugar and milk all in perfect harmony. Since it’s not too sweet and there's no vanilla, the flavour notes of the cacao really shine through.
Discover artisan chocolate, made bean to bar for the purest flavours. A cocoa bean is about 50% cocoa solids and 50% cocoa butter. White chocolate is made from the cocoa butter and ours is pressed from our own single estate beans so it has beautiful caramel cacao notes. To preserve these precious flavours, we make our chocolate in small batches, at low temperatures, taking up to 21 days, whereas industrial chocolate takes just a few hours. All our cacaos are ethically and sustainably sourced. Being a cocoa farmer himself, Willie puts the farmers at the heart of how he does business, buying all his cacao Direct Trade, paying a higher price premium than Fair Trade. They are all traditionally grown under shade trees which promotes both flavour and bio-diversity.
Willie Harcourt-Cooze, cacao farmer, pioneer and chocolate fanatic, started out buying a cocoa farm in Venezuela 20 years ago, and set up the UK’s first artisan ‘bean to bar’ chocolate factory in 2008. His passion is to inroduce everyone to the beautiful flavours of real craft made chocolate.
