Shopping List / Ingredients to buy:

• Ciabatta loaf

• 2 red peppers

• 250g cherry tomatoes

• 4 eggs

• Natural yogurt (for drizzling)

Recipe:

Pre heat oven 200°C/Fan 180°C/Gas 7.

1.Cut the ciabatta into large chunks, place on a baking tray. Drizzle with 3 tbsps olive oil & sprinkle with the seasoning, bake for 10-12 mins.

2. Dice the peppers. Heat 1 tbsp oil in a frying pan, add the peppers and tomatoes & fry for 6-8 mins, stirring occasionally.

3. Add the paste & 100ml water to the frying pan, bring to the boil, stir & then simmer until the sauce has thickened.

4. Make 4 wells in the mixture, crack an egg into each, then cover the frying pan with a lid & cook for 5 mins. Serve with the croutons & a drizzle of yogurt.
